Fresh is not always the best, not for salted egg. The most optimum salted egg that gives the most desirable taste and texture to our cooking and baking products are the ones that are close to 6 weeks' old. This is because the salting time plays a role in the formation of a properly prepared salted egg to give the desirable characteristics of a salted egg yolk include orange color, oil exudation, and a gritty texture. Our Salted duck egg, like ageing a red wine, are carefully kept in our store room to age for more than 6 six week before allowed to release to our customers. When it is perfactly aged, the yolk present a consistence orange creamy texture and it is time to savor the full flavour of salted egg.
